Pink Chocolate Post-Workout “Ice Cream”

Valentine’s Day is here, and I’ve got the perfect, appropriately-hued healthy treat for you to try.  What better way to show a little love for yourself than through exercise and a non-guilt-inducing sweet treat at the end?

I made this by accident, but I think it will be my new go-to recovery snack for the time being.  I was making a smoothie and haphazardly threw a few frozen beet chunks in at the end.  It came out as a beautifully-pink, frosty ice cream.  And I couldn’t taste the beets!  Only chocolate.  So here’s what you do:

In a blender, combine:

1 frozen banana (no peel!)

3-4 small (1″ or so) frozen beet chunks (I get mine from Trader Joe’s).  If you want a nice, bright color, use 4.  If you want to make sure you don’t taste the beets, use 3.  Adjust to taste.

1/4 cup milk of your choice

1/4 cup plain kefir or plain Greek yogurt

1 serving of your favorite protein powder (I like the organic, plant-based ones)

2 tbs. flax seed meal

1 1/2 tbs. unsweetened cocoa powder (Use less powder for a brighter pink.)

1 tsp. mint extract

Pulse on high until ingredients are VERY well combined and ice cream becomes a uniform pink color.  Enjoy immediately.
